How it works

You buy animals, not packages.

We sell beef and pork the way ranchers actually raise it: by the share. You reserve a fraction of an animal that's alive in our pasture today, we feed it out to your harvest window, and we deliver wrapped cuts the morning the truck rolls. Chicken — gated by our federal processing capacity — is sold through a rolling weekly line.

Beef shares

Black Angus.

Beef shares are Angus only. Pasture-finished, hand-cut to your spec, frozen vacuum-sealed within 24 hours of harvest. Pickup at the ranch or freezer-shipped within 500 miles. All-in pricing — processing + cut & wrap included in the share. The Highland herd stays on pasture for breeding and the creamery; we do not sell Highland beef.

Berkshires from the post-oak woodlots in Kemp, finished on acorns the same way English smallholders did 300 years ago. Cut sheet included with every share — chops, roasts, sausage, bacon, lard, bones.

Chicken

Heritage broilers raised on grass and bugs — never corn, never soy. We tear every bird down by hand and process under the federal producer exemption (≤ 20,000 birds/year). Capacity is real, so we run a rolling 8-week line. Your slot is confirmed when you reserve.

Stock & offal

The honest cuts.

Backs and necks for broth. Feet for collagen. Livers, hearts, gizzards for the cooks who know what to do with them. Same line, same week.

Eggs

From the layer flock.

Multicolored shells. Bright orange yolks. Gathered every morning at 6 AM. The layer flock is currently under-producing for our wholesale committments — direct-to-consumer eggs reopen as supply recovers.
